Despite the plethora of kadhi pakoda recipes available online, a recent Instagram video by British chef Jake Dryan has stolen the show, presenting his distinctive interpretation of this classic Indian dish.
In the video, Jake combines chickpea flour with buttermilk and adds a variety of spices to the mix. He places a wok on the stove, pours oil and introduces fenugreek seeds, red chillies, minced garlic and green chillies, creating a fragrant base.
The onions add perfectly to the sizzling mixture. Once all the components are cooked flawlessly, Jake puts the prepared buttermilk and chickpea flour mixture into the wok.
As the piece de resistance (the cakes), the chef skillfully prepares another batch of chickpea flour and enriches it with turmeric, garam masala, red chilli powder, salt and water to create a thick paste.
