In the viral video, the chef of the well-known Rameshwaram cafe is seen using an unusual technique. First, he cleans the cooking surface with a broom before liberally coating the dosas with ghee. It makes sense that the restaurant is receiving criticism.
The Facebook video posted by @Thefoodiebae shows a chef in front of a sizable tawa in the open kitchen of a restaurant. Behind him you can see a crowd of customers impatiently waiting for his orders.

He gets to work preparing the tawa for dosas. She quickly sprays him with water before using a broom to sweep the tawa. She continues cleaning as the water in the heated tawa turns into steam.
One tawa is needed to make twelve dosas.

The fact that the tawa was cleaned with a coconut broom is what has angered onlookers the most. Several social media users were evidently “disgusted,” as the comments section of the video makes clear.
However, this is standard procedure in the South. It is a custom passed down from generation to generation to clean the tawas with coconut brooms.
