Chefs Benoit Bruel and Fabien Montellanico are the brains behind this masterpiece.
What record did they break?
The 1,001 varieties of cheese helped chefs create a new Guinness World Record. With 940 types of French cheese and 61 types of international cheese, the master pizza is an explosion of flavor.
Together with YouTuber Florian OnAir and cheesemonger Sophie Hatat Richart-Luna, the chefs set out on this cheesy expedition, producing a record-breaking yet incredibly delicious pizza.
Two grams of cheese each were carefully placed on the pizza base. In order for the dough to support the weight and produce a tasty, intact masterpiece, the chefs had to pre-bake it.
The softer cheeses were carefully stacked on top of the harder ones to regulate the variation. This is a true marvel of culinary engineering because the tower remained intact during baking thanks to the creative use of a cookie cutter.
Former record holder Bruel traveled around France for five months in search of unusual cheese varieties. Some kind cheesemongers were so excited about breaking a world record that they offered their cheeses for free.
“It has been a real feat to be among the cheesemakers and on the farms to meet producers so passionate about their profession,” said Bruel, expressing his passion.
In addition to breaking the previous record set in 2016 for the largest display of cheese variations, Bruel and his team also achieved the record for the most varieties on a pizza.
Bruel had already won the championship in 2020 with a total of 254 cheeses.
This time, he set a record of 1,001, demonstrating his unwavering dedication to pushing the boundaries of cooking.
